In preparation for Valentine’s Day coming up this Saturday, today’s Pop Liz Clink recipe is more desert than cocktail. It’s a super simple and super decadent Strawberry Champagne Float. You may be thinking “What?! Champagne and Ice Cream?! That’s weird.” But trust me, have no fear! I promise it’s delicious. It’s what I’m planning to make for my husband after we get home from our dinner date, and I’m pretty sure he’s going to love it.

If you don’t have a husband or boyfriend to surprise, this is also the perfect girls night treat. 😉

All you need are three ingredients – prosecco, strawberries, and vanilla ice cream.

First, cut the strawberries into tiny pieces.

Today I’m showing y’all how to make a Classic Champagne Cocktail. It’s seriously so easy, but one of those easy recipes that will still impress your friends. Based on what I’ve read about this particular recipe, it’s one of the oldest cocktails ever, with recipes dating back to the 1870’s. It’s simple, it’s stood the test of time, and it’s delicious. Here’s how you make it.

Ingredients: 

  • Bottle of champagne
  • Bitters
  • Sugar Cubes
  • Lemon

Directions:

  1. Place 1 sugar cube in the bottom of each glass.
  2. Sprinkle 2-3 drops of bitters on each sugar cube.
  3. Pour champagne into the glass.
  4. Peel lemon zest for garnish.

Really, there’s no strict rules – which is part of why punch is so great (besides the fact that it’s delicious, of course). 😉  Today’s Pop Liz Clink recipe, Sparkling Orange Raspberry Punch, is one of those super simple crowd pleasers that takes less than five minutes to make, but will keep folks coming back for more!

This sparkling punch recipe is great for a New Year’s Eve punch, but it’s also a great recipe for wedding showers, baby showers (switch to a lime sorbet for a baby boy), and bachelorette parties. Really, anytime you need a simple drink that will serve lots of people, punch is your best bet.

All you need is orange juice, ginger ale, raspberry sorbet, two bottles of sparkling wine or champagne, and orange slices for garnish.

And there you have it! A super simple, 5 minute punch recipe that’s perfect for New Year’s Eve!

Ingredients

  • 1 quart raspberry sorbet
  • 1 container orange juice
  • 2 bottles sparkling wine or champagne of your choice
  • 1 2-liter bottle of ginger ale
  • Optional: orange slices for garnish

Directions

  1. Chill the orange juice, champagne, and ginger ale.
  2. Scoop (or place entire block) of frozen raspberry sorbet into punch bowl.
  3. Pour the chilled orange juice over the sorbet.
  4. Pour the chilled ginger ale into the punch bowl.
  5. Pour both bottles of chilled champagne into the punch bowl.
  6. Stir gently (it’s ok if it gets foamy).
  7. Garnish with orange slices, and serve immediately.

I’ve never had a bad mimosa, and chances are you haven’t either. In fact, the classic mimosa is my idea of a perfect Saturday morning. But sometimes, especially during the holidays, it’s nice to amp up a classic cocktail recipe. So today, I’m excited to share with all of you a family recipe that makes a traditional mimosa just a bit more festive (and special), making it the perfect cocktail to enjoy over the holiday season.

All you need are frozen strawberries, orange juice, champagne, a blender, and five minutes.

  • 2 cups orange juice
  • 1 10 oz. package frozen strawberries
  • 1 bottle champagne

Directions

  1. Combine orange juice and strawberries in a blender.
  2. Blend until pureed.
  3. Pour strawberry mixture into flute and add champagne.
  4. Stir as necessary.

If you’re anything like me, when fall arrives, that means it’s cider time. And especially now that we’re coming up on Thanksgiving, it’s just the perfect time of year for this sweet and spicy treat. The only thing (in my book, anyway) that can make cider even better – adding a bit of sparkle. Here’s how to make a tasty (and beautiful) Sparkling Apple Cider Sangria that’s sure to be a crowd pleaser for your friends and family this holiday season.

First, clean the fruit. There’s nothing simpler and cleaner (I’m talking no toxic chemicals kind of clean) than The Honest Company’s fruit and veggie wash.

Chop two apples (I’ve used different kinds before, Pink Ladies and Honeycrisps are both good options) and two pears.

Put the fruit into a pitcher. Mine is from Crate & Barrel.

Add a bottle of white wine. Pinot Grigio is my favorite, so that’s what I used.

Now, add 2-3 cups of apple cider. I just used a box cider kit, but feel free to get crazy by making your own from scratch. My cousin Liza over at Paperback Wanderings assures me this is a good homemade cider recipe (and she would know, y’all).

Add a half a cup of brandy. Then, refrigerate the pitcher for at least an hour.

When you’re ready to serve, it’s time to pop the bubbly! I literally only picked this brand because I thought the bottle was pretty. Just being honest. It was yummy though. 😉

Add about a cup or so of sparkling wine. Just enough to give the sangria a little bite.

I got these wine glasses off my wedding registry several years ago, and I still love them just as much today as I did then.

Ingredients: 

  • 1 bottle white wine (I used Pinot Grigio)
  • 2-3 cups apple cider (here’s a homemade cider recipe, but feel free to use a box like me)
  • 1/2 cup brandy
  • 2 apples chopped
  • 2 pears chopped
  • 1 cup sparkling wine (can substitute soda if bubbly isn’t your thing)

Directions:

  1. Chop fruit and add to pitcher.
  2. Add all liquid ingredients (except the sparkling wine) and stir.
  3. Refrigerate for at least one hour.
  4. Add sparkling wine immediately before serving.
  5. Enjoy!
